Raised in Extremadura, the historic heartland of Iberian ham, in a family devoted to this world, I inherited my passion for Spanish gourmet products, and I approach them from two sides.
The commercial side: I trained as an economist at some of Europe’s leading universities, Universidad Carlos III de Madrid and Università Bocconi in Milan.
The craft: from a very early age, I have been driven to master the art of carving. I trained at Spain’s carving schools and was taught under national carving champions.
